FLORENCE -Medieval leaks ‘tempura’

Leaks are very common in medieval recipes, as we will see. Leak soup, sauté or pies are in all the medieval recipe book. Leaks are also used to enrich de flavour of filled pasta.

This recipe of fried leaks is particularly interesting because it reminds of modern Japanese “ramen” (although there is no relationship among the two). It is relatively easy and quite fun to present.

LEAKS ‘tempura’ (Vegan)

Wash leaks, part them in four. Boil them for a few minutes and dry.

On a separate bowl, mix flower and water [*we recommend 2 parts of flowers and 3 parts of water, all extremely cold] with a little salt.

Dip leaks in the batter and fry them.
